Ingredients:
- 12 slices whole-wheat bread, cut into cubes (12 cups)
- 1 cup sweetened dried or fresh cranberries, chopped or raisins
- 3 cups low-fat milk
- 1 can (15 oz.) pumpkin puree
- 4 large eggs, beaten
- 1/2 cup packed light brown sugar
- 1/4 cup packed dark brown sugar
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
