Grade 9 - Adult. Join Carol for a delicious evening (or afternoon) of kimchi making, called kimjang, which is listed as part of UNESCO Intangible Cultural Heritage of Humanity. Come prepared to learn to make your own batch of napa cabbage kimchi, while gaining a deeper understanding of the history, ingredients, and traditions behind Korea’s national dish. From the first steps of salting the cabbage all the way to the preparation of kimchi paste, you’ll be guided step-by-step to create a take-home kimchi perfectly suited to your tastes and spice level. In addition to the kimchi you made (about 1-pound) You will take home cabbage and all the ingredients to replicate it at home. If time permits, we’ll enjoy a simple meal together. Bring your own apron, chopping board or mat, chef knife, mandoline (optional). Your kimchi can be made vegan. Instructor: Carol Chase. 1 class.
