Oysters, Vegetables, and the Cans They Went Into. Commencing in the mid-19th century, Baltimore was a major food processing center, becoming the center of canning in the United States. Oysters, then fruits and vegetables, were cleaned, cooked, and canned in at its peak, more than one hundred packing houses. The industry joined the efforts of thousands of workers who made the cans and processed the food into the 20th century.
