Instructions
1. Spray two 9-by-5-inch glass loaf pans with nonstick spray.
2. Preheat the oven to 350 degree Fahrenheit.
3. In a medium bowl, sift together the flours, baking powder, baking soda, spices and salt. Mix well with a whisk.
4. In a large bowl, using either a whisk or electric mixer, beat the eggs and then add the oil. Whisk until small bubbles form. Add the sugars (and molasses, if desired) and whisk until the mixture is smooth.
5. Add the yogurt, pumpkin puree and vanilla extract, and mix well.
6. Gradually add the flour mixture and whisk until mixed—don't over mix. Pour half of the batter into each of the two prepared loaf pans.
7. Bake the loaves for about 45 to 60 minutes, or until a toothpick inserted in the center comes out clean. Let stand on a wire rack for 15 minutes, then invert onto the rack and turn right-side up. Cut into slices and serve either warm or at room temperature.
