Light Tuna Salad Sandwich
Ingredients
- 1 6-ounce can pole-caught albacore tuna (such as Whole Foods 365 or American Tuna brands), drained
- 1/2 cup low-fat or nonfat Greek yogurt
- 2 celery stalks with leafy tops, diced
- 2 radishes, diced
- 1/4 cup grated carrots
- 1 teaspoon fresh minced dill, or 1/2 teaspoon dried dill
- 2 teaspoons minced green onion
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon Old Bay seasoning, optional
- 4 leaves green-leaf lettuce
- avocado slices, spritzed with lemon juice to prevent browning
- 8 slices whole-wheat bread, toasted
In a medium-sized bowl, combine tuna with all other ingredients and mix well. Layer tuna salad, lettuce and avocado slices between bread and serve. Serves four.
