Campground Curry
Ingredients
1 pound extra lean ground beef
1 tbsp. vegetable oil
Large tart apple, peeled and diced
Large onion, diced
1 tbsp. curry powder
1/2-cup flour
1 tsp. powdered beef bouillon
12-ounce can of evaporated milk
Water
Cooked rice
In a large, nonstick skillet fry your ground beef in hot oil, breaking it up as it cooks. Keep stirring over high heat while you add apple, onion, curry, flour and the bouillon. Add water to the evaporated milk to make 2 1/2 cups of liquid and stir it into the meat mixture. Bring everything to a boil, stirring until it thickens. Serve the final mixture over rice. You can also top the final dish with shredded coconut, mango chutney, raisins, diced scallions, chopped bananas or peanuts.
